Nubian cookery

Nubian Food is unique both in taste and perparation.As Nubians are scarttered all over Uganda and Kenya, they also tend to adapt with the regional cooking.
*KISSIRA - Is a white paper like bread,normally prepared from Lagin (Lagin is watery,prepared from pounded maize without husk,its pounded into a smooth paste)
*GURUSA- Its a Chapatti - pancake like-often compraed to Injera traditional Ethiopian bread,cooked similary....its prepared with similar paste with additives for partial fermentation.
*LEBERE -This is Kisira dried in the sun to became like corn flakes.
*FETIR- This is Kisira treated with burut sugar then cooked in oil.
*MONGOLOBO- This is a type of cake made from Lagin.


VARIOUS NUBIAN RECIPES ORIGINAL AND ADAPTED.

You will find in the modern world today, most of the African food has to be prepared the modern way without having to lose the authenticity.
Take for instance the stove, the utensils and the facilities are all in line with the modern world and Kenyan Nubians are no exception to this change.It will also be noted that due to the integration with other communities , some dishes are adapted from them and also utilised practically as one of the daily meals in every household
Common ingredients used in a traditional Nubian food, just to mention but a few;
Meat -Chicken, Beef ,Fish (local Varieties)

Spices-Green Ginger ,Bicarbonate of soda ,Cloves, cinnamon
cardamon, jeera, coriander, Pilau mix,tumeric,Curry powder ,Garlic.

Vegetables-Nyagwa/Tigiri/Saro ,Layu Mulukia (Green & Dried,Beans,Pumpkin Leaves ,Dried Bamia ,Birinjani,Ndommma ,Rice ,Sukuma Wiki(kale) ,Kisamvu,Cassava,Groundnuts,Maize flour,wheat flour.

Others
Aturun(kombo) or Bicarbonate of soda,Baking powder

HOW CAN YOU PRESENT A NUBIAN DINNER....

Guests are invited to sit on the traditional mat, Birish.Food is served and covered with beautiful Kutas-food covers.
